Zaragoza Report: Shelf Life Extension Of Fresh Beef Packaged In Modified Atmosphere By Varying Lighting Conditions Of Retail Display - The display of fresh red meat packaged in modified atmosphere (70% O2 + 20% CO2 + 10% N2) is greatly influenced by the type of lighting used. Lighting plays a crucial role in the photo oxidation (discoloring) of the pigmentation and its energy acts as an accelerator in the growth of metMyoglobin. Ultra-violet light produces far more discoloration in meat than visible light. Even small amounts of radiation cannot be ignored. The aim of this research was to investigate the effect of lighting conditions on red meat displays. |
